You’ll notice that most of the baking recipes here include both the traditional recipes ingredients and a gluten free variation. When one of my children developed a sensitivity to gluten, I started baking gluten-free.
For several years, I enjoyed playing with the special flours and starches and finding the right combination for each recipe. Because I have never personally had any issues with gluten, I’ve been able to test every recipe side by side with its traditional flour counterpart.
This means that when I say that something tastes every bit as good as the traditional version you can trust that it does.
Thankfully, my son outgrew his sensitivity to gluten and I no longer am required to bake this way. There are however hundreds of well-tested gluten-free recipes here for anyone who remains gluten-free.
