The Best Ever Taco Meat has been a staple on my meal plan for years now, but sometimes I like to mix it up a bit.

My friend Aggie inspired these Black Bean and Spinach Tacos and let me tell you, it was an awesome surprise just how much the whole family enjoyed it – spinach and all.

It was only natural that I try this vegetable-filled taco meat recipe next. The spicy beef is mixed with bell peppers, onions, corn, and black beans to create a super hearty skillet that’s perfect for filling tacos, burritos, quesadillas, and more.

Taco Meat Seasoning

Nothing seasons your favorite taco meat better than a generous helping of Homemade Taco Seasoning. Loaded with an abundance of flavor and a tiny bit of heat, taco seasoning gets used more than anything else in my spice cupboard.

Just a bit spicier than standard taco mixes and completely adaptable to your individual tastes, these are some of my favorite spices in the kitchen.

  • red chili powder
  • red pepper flakes
  • cayenne pepper
  • dried oregano
  • smoked paprika
  • ground cumin
  • garlic powder
  • onion powder
  • kosher salt
  • freshly ground black pepper

Ingredients 

  • 2 pounds ground beef
  • 1/2 cup Mexican Spice Mix or taco seasoning
  • 1/2 yellow onion, diced into 1/2-inch pieces
  • 1 green bell pepper, diced into 1/2-inch pieces
  • 1 red bell pepper, diced into 1/2-inch pieces
  • 1 yellow bell pepper, diced into 1/2-inch pieces
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup chopped baby spinach (optional)
  • 1/4 cup fresh cilantro, chopped

Instructions 

  • Cook and crumble the ground beef, sprinkling with the spices as it cooks. Add the onions and continue cooking when the beef is about halfway cooked.
  • Drain any excess grease and add the peppers. Stir to combine. Continue cooking for 3-4 minutes, until the peppers are slightly softened.
  • Add the black beans and corn and stir to combine. Continue cooking an additional minute to warm the beans. Add the spinach, if desired, and stir to wilt.
  • Serve immediately or let cool and portion into freezer-safe containers. Enjoy!

Notes

Don’t hesitate to add more spices, if needed. The key to all the flavor here is the generous amount of Mexican spices.
