Welcome to the weekend, my friends! We’ve had family visiting for the past couple of weeks and it’s been so much fun seeing my boys play with their younger cousins. It’s been a while since we had a baby in the house and hearing the toddler squeals and laughter was so much fun. I’m enjoying a very relaxed Saturday morning right now and sipping my coffee while planning recipes to shoot this week.

ON THE BLOGS THIS WEEK: Creamy ranch dressing meets crisp vegetables and tender bites of pasta in this Ranch Pasta Salad. It’s a cool, easy dinner to beat the heat, and with a total prep and cook time of 20 minutes, it’s my kind of summer meal.

This Southwest Chicken Skillet with Corn and Zucchini is filled with spicy bites of chicken, fresh sautéed vegetables, plenty of Mexican spices, and a squeeze of lime to keep the flavors fresh and bright.

This Crunchy, Cheesy Sauteed Cauliflower has me over here making the same side dish on repeat multiple times a month lately. It’s jaw-droppingly easy to pull together, and my boys like it so much they snag pieces right out of the pan.

Forget heating up the oven, I’m all about these Baked Sweet Potatoes in the Air Fryer. The first time I baked sweet potatoes in the air fryer it was a game-changer for me. This is a frequent lunch for me and I’m still not tired of it. 

Simple chickpeas get a fun upgrade with this Caramelized Onion Hummus. It’s hard to go back to the same old hummus after trying it with caramelized onions. It’s worth every bit of effort!

Topped with warm blueberry compote, crepes are a breakfast that my kids would love to eat every day. These Blueberry Crepes are a breakfast lover’s dream come true.

If you think rhubarb is just for baked goods, then you’re in for a pleasant surprise. Sweet and slightly tart, this Rhubarb Sauce is so versatile that once you start trying it with different desserts and treats in the kitchen, you’ll likely never stop.

What I’m CRAVING: Alllll the snacks! I’m going to make a snack spread for dinner tonight with friends. This 5 Minute Salsa, this Onion Dip, and maybe even this Whipped Goat Cheese with hot honey. Apparently, I’m in a very snack-y kind of mood today.

My FAVORITE THING this week is this daily moisturizer. My teenage son has been using it for a few years and I grabbed his the other day when I needed some sunscreen. Go figure… It turned out to be great! I’ve used all kinds of moisturizers over the years and I am loving this inexpensive daily one.

What I’m LISTENING to: Song of the Saints by Phil Wickham. This album is yet another blessing on repeat. I’m so grateful for the abundance of really excellent praise music being made today.
