You will need just three ingredients to make this ice cream topping:
- crunchy or creamy peanut butter
- coconut oil
- vanilla extract, optional
A note about coconut oil: When using coconut oil for recipes like this one, I prefer refined coconut oil that is free of coconut fragrance. (FYI – this is the “cheap” coconut oil, nothing fancy at all.)
You can certainly make this with unrefined coconut oil, it simply might have a hint of coconut fragrance to it.
Not just for ice cream, this peanut butter dessert sauce is nothing short of amazing with so many desserts. Pour it over cakes or use it as a dip for cookies and apples.

Peanut Butter Ice Cream Topping
- ⅔ cup crunchy peanut butter
- ⅓ cup coconut oil
- ½ teaspoon vanilla extract optional
- Combine the peanut butter and coconut oil in a small glass bowl or glass measuring cup. Microwave for 1 minute. Stir until combined. Add vanilla, if desired.
- Allow the sauce to cool to room temperature before pouring it over ice cream. (It can be poured while warm, but it will be much thinner and won't create the same magic shell effect.) Store at room temperature and reheat for just a few seconds when needed, if it firms up too much to pour.
