I have a few other things bookmarked on my must-try list as well, but these babies? I made them for the first time the same day I received the cookbook in the mail.

Next up on my must-try list are Cheeseburger Soup, Pan-Fried Steak, and Beef Pot Roast. Everything in the Beef It Up cookbook looks absolutely mouthwateringly delicious!

I always (and I do mean always) have some of the Best Ever Taco Beef in either the fridge or freezer. So, I grabbed a package and started rolling burritos. I had a very happy family that night.

I’ve tweaked the recipe a bit for my family’s tastes and to provide directions for making the burritos with ground beef, versus with leftover beef that you may or may not have on hand.

For my crew, I like to add some roasted and chopped green chile (canned or jarred chile works great here) as well as some extra taco seasoning when cooking the beef.

I’ve also added refried beans to the burritos, but feel free to swap them for whichever beans you like best. I’ve also made these with pintos and black beans.

This burrito recipe is about as versatile as it could possibly be. Everything is completely adaptable to your tastes and the burritos turn out great every time.

  1. Preheat the oven to 350°F. In a large skillet, cook and crumble the ground beef. Season the meat generously with taco seasoning while cooking. Add the green chile to the meat and stir to combine.
  2. Scoop the can of refried beans into a medium-size bowl and smash with a spoon until smooth and spreadable.
  3. To assemble the burritos, spread a line of refried beans down the center of a tortilla. Top it with a spoonful of the beef mixture, shredded cheese, and a sprinkling of cilantro.
  4. Roll up the burrito and place edge side down on a large baking sheet. Repeat with the remaining tortillas and fillings. Bake uncovered for about 20 minutes until the tortillas are golden brown with crisp edges.
  5. Remove from the oven and transfer the burritos onto plates. Add your favorite toppings to the plates and serve immediately.

Want a laugh? Sean told me that these burritos remind him of old-school Taco Bell burritos, but so much better. Since I know how much he used to like those burritos, I’m taking that as a compliment.

For more easy Mexican food dinner ideas, try some enchiladas, tacos, or these Smothered Chicken Burritos. Mexican Lasagna and Stuffed Bell Peppers are a couple more favorites with my crew.

Crispy-edged green chile chicken burritos full of cheesy goodness are an easy-to-assemble mealtime hit, full of green chile flavor.
