As with so many recipes, this one was inspired by the ingredients already in the kitchen. A bunch of very ripe bananas met my son’s request for waffles.

I played with our Buttermilk Waffle recipe a bit and the happy result is a beautifully crisp waffle that is almost unbelievably light and fluffy inside with plenty of banana flavor.

I am so giddy over these banana waffles that I made them twice this week, just to make sure they were as perfect as I remembered. And yes, they really are amazing. 

On their own, or topped with Buttermilk Syrup, Waffle Sauce, Brown Sugar Butter Syrup, peanut butter, whipped cream, or good old maple syrup, these Banana Waffles are a great idea any day of the week.

Banana Waffle Recipe

  1. Preheat your waffle iron. Combine the bananas, eggs, buttermilk, vanilla, and brown sugar in a bowl and whisk until smooth. (You can also combine in a blender and pulse smooth.)
  2. Combine the flour, cornstarch, baking powder, baking soda, salt, and nutmeg in a mixing bowl and whisk to combine. Add the wet ingredients and stir until well mixed. Stir in the melted butter.
  3. Pour batter onto the hot waffle iron and cook until crisp and browned. Serve with the toppings of your choice.

Ingredients 

  • 3 small ripe bananas 1 cup mashed
  • 3 eggs
  • cup buttermilk store-bought or homemade is fine here
  • teaspoons vanilla extract
  • ¼ cup light brown sugar
  • cups all-purpose flour*
  • ¼ cup cornstarch
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¼ teaspoon nutmeg
  • ¼ cup butter melted

*Gluten-Free Alternative

  • cups brown rice flour
  • cup tapioca starch
  • cup potato starch

Instructions 

  • Preheat your waffle iron. Combine the bananas, eggs, buttermilk, vanilla, and brown sugar in a bowl and whisk until smooth. (You can also combine in a blender and pulse smooth.)

Notes

FREEZER MEAL: Let the waffles cool completely, before storing them in an airtight Ziploc bag. Reheat the frozen waffles in a toaster oven or in the microwave.

    Hi Mary, one of my daughter's was recently diagnosed with asthma. After doing some research, I've decided to go gf. I intend to use many of your gf recipes. My question is, is there such a thing as a general all purpose gf baking flour?

      There are several all purpose GF flour blends that might work for you, I've heard great things about the Cup4Cup brand. For myself, I've found I get the best results with separate flours, simply because each recipe can need a slight tweaking.

      Yes, you should be able to use an alternate milk (I'd probably use almond) and a coconut oil or palm shortening. If you want a slight coconut flavor, coconut milk and oil would be delicious too!

    Your recipe says 1/4 light brown sugar. 1/4 what of light brown sugar? Is it a 1/4 cup?

      Yes, it’s a 1/4 cup of brown sugar. I’ve corrected the recipe now to reflect that. Thanks for the heads up!

    I used the Bob’s Red Mill 1:1 GF flour with the measurement given for AP flour and it turned out really well!5 stars

    The Ingredients call for 1/4 cup of cornstarch, but cornstarch is nowhere to be found in the instructions. Even the gluten-free ingredients do not mention cornstarch. What is the cornstarch for, or was this a recipe typo? 😉4 stars

    I just made these banana waffles. The smell delicious while baking but not much of a banana taste when eating. They also became soft after removing them from the waffle iron. Crispy brown but went soft. Any idea why? I had to put them in my toaster oven to crisp up.
    The buttermilk syrup is delicious!!3 stars

      They are a softer waffle as they cool, but there should’ve been a strong banana taste. How ripe were your bananas?
