Ingredients
3small ripe bananas1 cup mashed
3eggs
1½cupbuttermilkstore-bought or homemade is fine here
1½teaspoonsvanilla extract
¼cuplight brown sugar
2½cupsall-purpose flour*
¼cupcornstarch
1tablespoonbaking powder
1teaspoonbaking soda
½teaspoonkosher salt
¼teaspoonnutmeg
¼cupbuttermelted

1½cupsbrown rice flour
⅔cuptapioca starch
⅓cuppotato starch
Instructions
Preheat your waffle iron. Combine the bananas, eggs, buttermilk, vanilla, and brown sugar in a bowl and whisk until smooth. (You can also combine in a blender and pulse smooth.)
Combine the flour, cornstarch, baking powder, baking soda, salt, and nutmeg in a mixing bowl and whisk to combine. Add the wet ingredients and stir until well mixed. Stir in the melted butter.
Pour batter onto the hot waffle iron and cook until crisp and browned. Serve with the toppings of your choice. Enjoy!
Notes
FREEZER MEAL: Let the waffles cool completely, before storing them in an airtight Ziploc bag. Reheat the frozen waffles in a toaster oven or in the microwave.
