Chewy, sweet, perfectly stretchy, and gooey Peanut Butter Rice Krispies Treats filled with chunks of Reese’s peanut butter cups are a fabulous new way to enjoy everyone’s favorite treat.

While cleaning out my baking stash in the freezer last weekend, I found not one or two, but 4 different bags of Reese’s products. I don’t even know how that’s possible, since my kids typically devour that kind of “leftover” ingredient. Apparently, I did a very good job of hiding them in the freezer.

Anyways, YAY for a fun new recipe, right? I have been craving rice crispy treats and when I found all of these Reese’s it was a lightbulb moment. What could possibly go wrong?

Peanut Butter Rice Krispies Treats

Now I just had to decide whether to stick with classic rice crispy treats for the base or fancy them up as peanut butter or chocolate treats…

That wasn’t a remotely hard decision, friends. I’m a bit of a peanut butter addict. Celery or apples with peanut butter is a daily snack for this girl. You just can’t do wrong when adding peanut butter to a dessert, right?

Peanut Butter Rice Krispies Treats Recipe

  1. Line a baking sheet with parchment and set aside. (Feel free to use foil, if you’d prefer. Just don’t forget to grease the foil very well with butter!)
  2. Melt the butter in a large pot, over medium heat. Add the marshmallows and stir until almost melted. Add the peanut butter and stir until smooth.
  3. Remove from the heat and stir in cereal until well coated. (If desired, add the additional marshmallows now.) Gently stir in the peanut butter cups, until mixed throughout.
  4. Scoop the sticky mixture onto the prepared pan. Lightly wet your hands (or butter them) and gently press the cereal out across the pan, taking care not to press too hard and compact them. Let cool for a few minutes before slicing.

Perfect Rice Krispie Treats are soft enough to pull apart with your fingers, the day after making them after they’ve been sitting out on the counter. 

For ME, Perfect Rice Crispy Treats are soft and chewy with plenty of ooey-gooey marshmallow goodness. I want to taste the sweet and sticky marshmallows in each and every bite of my treats.

I’ve tested this recipe by leaving the sliced rice krispy treats on a plate for 48 hours and they remained chewy and not at all hard. I don’t like my rice krispy treats to scrape the roof of my mouth or become crunchy. So, in short, gooey rice crispy treats = my happy place.

All of that said, this Reese’s Peanut Butter Rice Krispie Treat recipe is based on the classic treats and I promise they turn out chewy and gooey every single time!

Filled with irresistible chunks of Reese’s peanut butter cups and bits of sticky marshmallows, no one has been able to resist these treats!

The key to chewy, never crunchy, always gooey soft rice krispie treats is plenty of marshmallows AND never ever press hard to compact them. If you compact them too much when baking them, they’re going to firm up too much. So, be sure to use a gentle touch when pressing them into a pan.

Peanut Butter Rice Krispy Treats

Chewy, sweet, perfectly stretchy, and gooey Peanut Butter Rice Krispies Treats filled with chunks of Reese's peanut butter cups are a fabulous new way to enjoy everyone's favorite treat.

Servings: 16 servings

Ingredients 

  • ¼ cup butter
  • ½ cup creamy peanut butter
  • 8 cups miniature marshmallows about 1 ½ (10 ounce) bags of marshmallows
  • 6 cups crisp rice cereal
  • optional: additional 2 cups miniature marshmallows
  • cups assorted Reese's cups, mini-size or roughly chopped miniature or regular size cups
  • ½ cup semi-sweet chocolate chips optional
  • 1 teaspoon refined coconut oil or vegetable oil optional

Instructions

Optional Chocolate Topping

  • Combine the chocolate chips and oil in a small glass bowl. Microwave for one minute, stir. Microwave an additional 30 seconds, only as needed. When the chips are mostly melted, remove from the microwave and stir until smooth.
  • Drizzle the rice krispie treats very lightly with the melted chocolate, if desired. Store in an airtight container for several days. Enjoy!

Notes

For an especially gooey treat, you can add additional marshmallows right at the end, just before pressing the mixture into the pan. I like the rice krispy treats both ways, but for the most part, I add those extra marshmallows every time.
