Italian Grinder Sandwich

The slight crunch and crackle of toasted bread, soft and warm meats topped with gooey, melted cheese, crisp onions and peppers in an incredible slaw. What’s not to love? Put them all together and it’s pure lunch heaven.

Toasted hoagies are bursting with incredible flavor and all of my favorite grinder sandwich ingredients. This Italian grinder sandwich may be the best sub sandwich I’ve had in the past year.

This recipe is extremely versatile, making it great for large gatherings. Everyone can pick out their favorite lunch meats, just swap out the turkey for roast beef or pepperoni, etc. Or, you can just pile them on. I won’t judge.

Kids adore this quick lunch. But, especially for little mouths, cured sliced meats can be difficult to chew. If you chop up the meats, it makes it easier to manage. And, what child wouldn’t want their own, special “chopped” grinder sandwich?

What is a grinder sandwich, anyway? This popular sandwich hails from the New England states and has been made especially popular recently by countless TikTok videos.

I looked up some basic directions on the Sargento website and couldn’t resist trying one. My carnivorous family went a bit crazy over this TikTok grinder sandwich. We doubled this recipe, and there were no leftovers.

Italian Grinder Sandwich Recipe

You’ll need the following ingredients to make this recipe:

  • hoagie buns
  • salami, ham, turkey, and prosciutto
  • sliced provolone and grated Parmesan cheese
  • iceberg lettuce, red onion, and tomatoes
  • pepperoncini peppers
  • mayonnaise and red wine vinegar
  • dried oregano, garlic powder, and salt
  • crushed red pepper flakes

Start by preheating the oven to 425°F. Open the hoagie rolls and place them on a large baking sheet. Then, layer one side of each roll with salami, ham, turkey, prosciutto, and slices of provolone cheese.

While the oven heats, combine the pepperoncini, Parmesan, mayo, vinegar, oregano, garlic, salt, and red pepper in a large bowl. Stir to combine. Then, add the lettuce and onions and toss well to coat.

Grinder Sandwich Recipe

Place the rolls in the oven and bake for 6-8 minutes, until the cheese has melted and the bread is lightly toasted.

Remove the buns from the oven and layer tomato slices over each warm sandwich. Then, top with slaw and an additional sprinkling of Parmesan. Serve immediately.

Ingredients 

Slaw Ingredients

  • ½ cup pepperoncini peppers thinly sliced
  • ¼ cup freshly shredded Parmesan
  • cup mayonnaise
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried oregano
  • ½ teaspoon granulated garlic or garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon crushed red pepper flakes plus more to taste
  • 4 cups iceberg lettuce shredded
  • ¼ cup red onion very thinly sliced

Sandwich Ingredients

  • 4 hoagie rolls
  • 8 ounces thinly sliced salami
  • 8 ounces smoked or honey ham
  • 8 ounces smoked or honey roasted turkey
  • 4 ounces prosciutto
  • 8 ounces sliced provolone cheese
  • 2 tomatoes sliced ¼-inch thick
  • ¼ cup freshly shredded Parmesan

Instructions

  • In a medium-size bowl, combine the pepperoncini, Parmesan, mayonnaise, vinegar, oregano, garlic, salt, and red pepper. Stir to combine. Add the lettuce and onions and toss well to coat.

Sandwich Instructions

  • Preheat the oven to 425°F. Open the hoagie rolls and place them on a large baking sheet. Layer one side of each roll with salami, ham, turkey, prosciutto, and provolone cheese.
