Coconut Pineapple Smoothie Ice Cream recipe by Barefeet In The Kitchen

Thick enough to eat with a spoon; this was a deliciously creamy smoothie with pineapple and coconut flavors and just a hint of banana.

If I’d been smarter, I would not have let my kids taste this smoothie. I easily could have eaten the entire recipe all by myself.

Lighter in flavor and not as filling as smoothies made with dairy, this was the perfect snack and we all enjoyed it.

Coconut Pineapple Smoothie Ice Cream

Ingredients 

  • 1 cup coconut water
  • 1 banana frozen for a thicker consistency
  • 1 1/2 cups frozen pineapple roughly chopped into large chunks
  • dash of ground ginger
  • 1/2 teaspoon vanilla

Instructions 

  • Layer ingredients into the blender and puree until smooth and creamy. With the blender turned off, use a spatula to scrape the sides as needed. Scoop into glasses or bowls and serve immediately. Enjoy!

      It is my favorite jar. It's just an old one that I picked up second hand. I'd LOVE to find more of them though!

      You could substitute mango and it would help make the smoothie creamy without the banana. You could also skip the banana entirely. The banana adds to the creaminess, but it isn't essential to the smoothie. I hope that helps!

      You should be able to purchase it at most grocery stores. It is typically sold with the flavored waters or health drinks. I hope that helps!

    I made it today. The banana was over powering so I think next time I will only use 1/2.

      I made it too. The consistency wasn't as thick as I would like it to be.

      If you reduce the liquid, that will thicken it up a bit. I'd start with half the amount and just use enough to get it pureed if you prefer it thicker.

      I added an extra banana and used coconut milk as I didn't have any coconut water. The extra banana made it a little sweeter which I thought my kids would find more palatable. I ate one portion as is and then made popsicles with the rest. Very good and a good base recipe for endless combinations!

      Mango or peach both work well as substitutes for bananas in smoothies. I hope that helps!
