Creamy Lemon Dip with Shortbread and Strawberries is a light summery dessert that is perfect for sharing with friends or family.
Creamy Lemon Dip with Shortbread and Strawberries is a light summery dessert that is perfect for sharing with friends or family. I made this dip for a pool party with friends last weekend and it disappeared fast.

The kids and the adults happily scooped up this dip with shortbread cookies and a pile of strawberries. The dip is tempting enough straight off the spoon, but when you serve it with Walkers Shortbread Cookies? I can tell you now that no one will be able to resist it.

I’ve had a great time working with Walkers Shortbread this year. Check out all the recipes that we’ve created together: Shortbread Turtle Cookies, Coconut Shortbread Truffles, Lemon Ginger Cheesecake Mousse Cups, and Scottish Oatcakes with Brie and Sweet and Spicy Jam, every single bite has been delicious.

While I’m not typically one to notice food holidays or some of the other more random holidays, National Friendship Day is celebrated on the first Sunday in August and I’m thinking that is an awesome excuse to make this dip again and invite some friends over this weekend to share it with me!

Creamy Lemon Fruit Dip

Pin Print Review
Servings: 2 cups

Ingredients

  • 8 ounces cream cheese room temperature
  • 1/2 cup heavy whipping cream
  • 3/4 cup lemon curd plus an additional 2 tablespoons for topping
  • Walkers Assorted Shortbread Cookies for serving
  • Strawberries for serving

Instructions

  • Place the cream cheese in a mixing bowl and beat with an electric mixer until it is smooth and creamy. Slowly add the cream while continuing to mix. Once the cream cheese and heavy cream are well combined, add 3/4 cup of lemon curd and mix again to combine. Scoop into a bowl for serving and top with the remaining lemon curd. Cover and refrigerate until ready to eat. Serve with shortbread and berries. Enjoy!

Notes

For the lemon curd in this dip, I used my 5 Minute Microwave Lemon Curd. It turns out perfectly every time and it’s honestly easier than going to the store to buy the lemon curd. The recipe will make more than you need for the Creamy Lemon Fruit Dip, but that’s a good thing, right? I can never have enough homemade jams, jellies, or fruit spreads in the refrigerator.
