This ice cream is SO good, my friends! When I finally nailed this recipe, the ice cream turned out perfectly smooth and creamy, tasting exactly like Captain Crunch cereal – the perfect pairing for the crunchy cereal on top when you serve it.

It’s been a few years since I first sprinkled a handful of Captain Crunch cereal over a scoop of vanilla ice cream. (I owe my friend Christi for that brilliant food pairing idea!) And let me tell you, there’s no turning back once you’ve combined cereal with ice cream.

Cereal Ice Cream

When you first taste a cereal ice cream, it is something you won’t forget. Cereal milk is infused with the flavors of the cereal, in the case of this Captain Crunch ice cream, those flavors are butter and brown sugar.

When you combine that cereal milk with cream and then churn it into ice cream, the result is a flavorful, rich treat that transforms your favorite cereals to a new level of dessert happiness.

Cereal Milk Ice Cream

  • Captain Crunch cereal
  • whole milk
  • heavy cream
  • light brown sugar
  • vanilla extract
  • kosher salt
Adding cream to cereal milk

Combine the cereal and the milk in a bowl and let rest for 30 minutes.

Place a fine mesh strainer over a large mixing bowl and pour the cereal mixture through the strainer into the bowl. Press down on the cereal with a spatula and discard the soggy cereal from the strainer.

Add the cream, brown sugar, vanilla, and salt to the bowl with the cereal milk. Whisk to combine the ingredients.

Pour into the ice cream maker and churn according to the manufacturer’s instructions.

Serve immediately for soft serve ice cream or transfer to an airtight container and store in the freezer until ready to serve.

To serve, scoop into bowls and top each serving with a handful of cereal.

  • cups whole milk
  • cups heavy cream
  • ½ cup light brown sugar
  • 1 teaspoon vanilla extract
  • teaspoon kosher salt
