Welcome to the weekend, my friends! I am so excited for the sunshine in the forecast today. I can hardly wait to spend some time outdoors at last!

ON THE BLOG this week: The ultimate Potato Chip Nachos start with a layer of crisp potato chips. Then they’re topped with melted cheese, hot bacon, cool ranch dressing, and green onions. This is a nacho combination that everyone loves.

I first shared this Cajun Seasoning Mix in The Weeknight Dinner Cookbook (link HERE). I use this spice blend at least twice a week and I figured it was long past time to share it on the website, so that I can more easily link to it for you in other recipes.

Cajun Pasta with Bell Peppers and Sausage was the best spur of the moment dinner we made last week. With little more than 20 minutes effort, you’ll have a creamy, spicy pasta that the whole family enjoys.

What I’m CRAVING: I’ve mentioned my friend Christi’s Chocolate Peanut Butter Cookies before, but they’re worth mentioning again. I am giddy to have the ingredients in the house right now and we’re going to make a batch this weekend. I can hardly wait!

My FAVORITE THINGS this week are these silk peonies (link HERE). I ordered them on a whim when I saw a photo of them on a friend’s desk and I really love them. They aren’t the most realistic faux flowers I’ve ever seen, but for about $10? I’m loving the way they’ve been a pretty bit of color to look at while we’re at home. I bought the light pink / blush color and they’re much nicer than I expected them to be for that price.

What I’m WATCHING: I watched the Waco mini-series this past week. (link HERE) Boy, do I have feelings about this one. It’s a 12 episode retelling of the Waco tragedy and as sad and horrifying as it was, I’m glad that I watched it.

The show was made a bit more interesting knowing that one of the survivors, David Thibodeau, participated in the making of the show. Have you watched it? I’d love to know what you thought.

What I’m READING: The Road To Grace: The Third Journal of The Walk Series by Richard Paul Evans (link HERE) I’ve really enjoyed this series and I’m not so patiently awaiting the rest of them from the library. Each of these books has been filled with hope and feels so real at times. I’m looking forward to reading the last two books.

Side note, if you’ve been struggling with reading during these weeks at home, these books have been easy reads for me. My focus has been all over the place and I’ve found that lighter reads really have helped.
