
Tender white beans, roasted green chile, and chunks of chicken come together in this Green Chile Chicken Chowder to create a flavorful meal absolutely perfect for a quick weeknight dinner. Served with crusty bread or fresh tortillas, this is a delicious and easy dinner. It’s that time of year again and there’s going to be soup simmering on my stove several times a week for the foreseeable future.
Green Chile Chicken Chowder is a simple soup that you can pull together with leftover roast chicken and a few pantry or freezer items. I made this for dinner one night last week when we were all hungry and not wanting to wait for anything fancier.
This recipe comes together in just 15 minutes from start to finish, leaving all of us happy and full. That makes this a win win dinner that is just about perfect in my book.

Green Chile Chicken Chowder
Ingredients
- 3 cups cooked great northern beans or 2 14 ounce cans
- 14 ounces can diced tomatoes
- 1 cup chopped green chile fresh, frozen, or canned is fine
- 2 cups chicken broth or 1 14 ounce can
- 1 teaspoon cumin
- ½ teaspoon kosher salt
- ¼-½ teaspoon cayenne pepper
- 3 cups chopped chicken cut bite size
- Optional: lime wedges for serving grated cheese for topping
Instructions
- Combine the beans, tomatoes, chile, chicken both, cumin, salt, and pepper in a large pot. Stir and bring to a boil before reducing to simmer for five minutes. Add the cooked chicken, stir and simmer a minute longer. Remove from the heat when the chicken is warm. Scoop into bowls and squeeze lime around the top just before serving, if desired. Enjoy!
