Thin, bite-size strips of chicken breast are coated in a cheesy crisp breading then baked until golden brown and crunchy, making this Crispy Cheddar Chicken truly one of a kind. As soon as I saw the Cheesy Chicken Crunchers recipe in The Dairy Good Cookbook, all the other dinner options disappeared. This chicken turned out every bit as tasty as I’d hoped!My kids ate every single bite of this meal and they all asked for seconds. My favorite part? It required less than 20 minutes hands-on prep time!
Crispy Cheddar Chicken inspired by The Dairy Good Cookbook
Ingredients
- 2 1/2 pounds boneless skinless chicken breasts
- 1 cup all-purpose flour or brown rice flour for gluten-free recipe
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper
- 4 egg whites
- 1/2 cup milk
- 4 1/2 cups corn flakes crushed
- 2 1/2 cups shredded Mexican blend cheddar cheese
- Barbecue Sauce or Ranch Dressing for dipping
Instructions
- Preheat the oven to 375 degrees. Set two oven racks near the center of the oven, with one empty space in between the racks. Line two large baking sheets with foil and lightly grease with oil or spray with nonstick cooking spray. Set aside. Combine the flour, salt, and peppers in a shallow dish. In a second dish, whisk together the egg whites and milk. In a third dish, combine the crushed corn flakes and cheese.
- Slice the chicken breasts into 1" wide strips. Dip each piece of chicken first in the flour, then in the egg mixture, and finally in the cheesy cornflake mixture. Place each coated piece of chicken on the prepared baking sheets.
- Bake for 20-25 minutes, until the chicken is cooked through and the coating is crisp and golden brown. Serve with your favorite dipping sauce. Enjoy!

I have an awesome Magic Mac dairy recipe, cheddar and Monterrey jack cheese, milk, butter and uncooked noodles, our guests rave about it and they think I spent so much time on making it…It actually takes less than 10 minutes to put together and 40 to cook in the oven or I have a crock pot version for the days I leave to go out of town and dad and the kids can get it when they get home for dinner .I have always gotten requests for the recipe.:) My kids are not even big mac and cheese fans but they love this dish. its a family and friend favorite and the local ( Wisconsin cheese and fresh farm milk we have here in Minnesota we believe make it even that much better. We always buy from our local farms whenever we can OUr local ice cream by kemps is amazing!!

I would love to win this cookbook and the gift card too, I would make this chicken in a heartbeat.. I adore anyrhing dairy and would use dairy in my famous mac and cheese with shrimp and hot sauce as well..Also we adore ice cream from the Tillamook Ice Cream factory in Tillamook Oregon a wonderful daily indeedy! I love your blog read it and use the recipes all the time.. My mac and cheese uses Extra Sharp Black banded Tillamook Cheddar, I put in a few drops of hotsauce and also put in some tiny shrimp fresh from the sea, I use a huge macaroni to get all the goodness when I make the sauce with 1/2 and 1/2 no less and a cup of homemade bread crumbs I have browned in the oven sourdough bread and buttered to boot..I bake it lovingly and when I serve it no one who ever dines at our home doesn't ask for the recipe it is that good tasting..ciao from mary at [email protected]!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

My dad's side of the family is Italian and he always made great lasagna and baked ziti dishes for our occasions. I now make these dishes because they are delicious and feed a lot of people. These recipes are meaningful because they remind me of our special events.

My Mom made the best Hush Puppies when I was growing up. She got the recipe from her Mom, and I also made them when I was growing up, and now make them with my daughter! We use buttermilk in my Hush Puppies, and they are so delicious!

Growing up, my grandma lived in Georgia and when I was little, the first recipe she taught me to make was cheesy mashed potatoes with whole milk. We make these potatoes every Christmas in honor of her. Over the years, our family has modified the recipe by adding bacon or garlic to the potatoes, but they are still as cheesy as ever.
