Coconut Water Ice Cubes recipe by Barefeet In The Kitchen

Wondering what to do with leftover coconut water? Freeze it!

While I love the flavor of coconut water in smoothies and cocktails, I am not a fan of coconut water on it’s own. The ice cubes are great in a Coconut Lemon Sour.

I always seem to have some amount of it left in the refrigerator and I hate to have it go to waste. I’ll be tossing these ice cubes into future smoothies.

I use coconut water in my smoothies every day. I used to use pure fruit juice, but was concerned at the amount of sugar, along with the fresh fruit I was using, so now I use coconut water instead.

This is a great idea. And if you like the flavor of coconut water and you have leftovers. You can put it in your tea, in your soups for extra flavor and also it makes a good mixed drink with flavored vodka. Also great in smoothies.
