Baked Oatmeal is one of the easiest breakfasts I make and luckily, it’s loved by every member of the family. As a result, we make it at least a couple times a month.

It is simple and filling and the leftovers keep very well in the refrigerator or freezer. Not that we usually have any leftovers, but it’s happened once or twice.

Baked Oatmeal

Ingredients 

  • 3 cups oatmeal
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup raisins
  • 1/3 cup melted butter or oil
  • 3 eggs
  • 1 1/2 cups milk

Instructions

  • Combine all ingredients and pour into a greased 8x8 pan. Cook at 350 for 35 minutes. Serve warm.
  • Side note: The uncooked pan of oatmeal can be stored in the refrigerator overnight. When I wake up, I turn on the oven and bake it while I am getting ready. Yes, I even put it in the oven before it is preheated, just add about ten extra minutes. I love the simplicity of this breakfast!
  • FREEZER MEAL: Cool completely and then portion into individual servings. Store in airtight freezer bags or small containers. Reheat in the microwave with about a tablespoon of water.

    Have you ever subbed the eggs? Or at least 1 -2 of them? I was thinking applesauce for them….my youngest son has an intolerance to eggs, 1 should be okay in this dish, but not 3. Hmmm…..may have to try tweaking it, looks good!

    I made it once without the eggs. I started making it before I realized we were out of them. It was ok and we all ate it, but it honestly just wasn't the same. The eggs help form a thin custard-like layer across the bottom of the dish. So, the texture was quite different. If you try it with applesauce or another alternative to eggs, let me know how it turns out. Thanks!

    Made this the other day and just love it! I used old fashioned oats, added 1 tsp of cinnamon and during the last 15 min of baking, I added a sprinkle of sugar to caramelize the top. I am now totally hooked on baked oatmeal! I love the ease of making it ahead and then microwaving it in the mornings before work. Thank you!

    This is such a great recipe! I’ve made two variations on it based on my pantry. Granny Smith chunks or raisins. Nuts, no nuts. The possibilities are there! Thank you for a new favorite in my house!5 stars
