Welcome to the weekend, my friends! Any plans for this weekend? We’re headed outdoors for a hike this morning before the afternoon showers arrive. We’ll be checking out a new-to-us local area.

I have a few recipes in the works for tomorrow and I’m looking forward to some downtime at home with Sean and the kids. Who knows? Maybe we’ll really go wild and watch a movie in the freshly painted basement.

ON THE BLOG this week: What’s not to love about a fully loaded Ranch Potato Salad filled with bits of bacon and chunks of egg? This potato salad has been my kids’ favorite for a couple of years now.

Sweet berries, spicy jalapenos, onions, cilantro, and a squeeze of lime combine to make this Strawberry Salsa. This recipe comes together in about 15 minutes and the salsa disappears faster than that every single time I make it.

Classic No-Bake Cookies have met their match with these Chocolate Peanut Butter Coconut Bites. It doesn’t get much easier than just stirring everything together and pouring it into a pan.

We celebrated Oscar’s first gotcha day this week with these Watermelon Dog Treat Popsicles. These have become Oscar’s favorite treat. It cracks me up when he hovers near the freezer and peeks inside to see where the treats are.

What I’m CRAVING: These Ribeye Steaks look absolutely incredible. We’re planning to grill steaks for Father’s Day tomorrow and I’m planning to try this Butter Sauce with them.

My FAVORITE THING this week is this stoneware dog dish. It’s large, heavy, and perfect for outdoors. We didn’t want anything lightweight to blow around or be easily knocked over. This holds plenty of water for Oscar. He has never emptied it in a day. (He still has his regular water dish indoors.) After running around the property, he’s a pretty happy camper to have water on the porch now.

What I’m READING: All Fall Down by Jennifer Weiner. This book was a bit of a struggle to get into, (it’s honestly quite depressing initially) but by about halfway through I didn’t want to put it down. This is a very real story of how an educated and successful working wife and mother fell deeply into addiction. I view this book as a kind of warning but told with an abundance of empathy. Reading this leaves no doubt in the reader’s mind that it’s a slippery slope from just one pill.
