Welcome to the weekend, my friends! We have a heck of a lot of snow still on the ground and it snowed a good bit again this week. Never fear though, I still love it and wouldn’t trade Ohio for anywhere else.

That said, spring is sounding pretty nice these days. Anyone else looking forward to warmer weather?

ON THE BLOG this week: Fragrant garlic, mushrooms, onions, and tomatoes are sauteed in butter and then tossed with fresh lemon juice and tender pasta to create the Lemon Butter Pasta of which dreams are made.

Elegant enough for a fancy occasion and fast enough to serve any night of the week, this recipe for Pan-Seared Scallops might become your new favorite way to eat seafood.

Creamy chunks of avocado are combined with tender pieces of chicken in a fresh and slightly spicy dressing to make this Avocado Chicken Salad.

What I’m CRAVING: I’ve made this three ingredient Mexican Pulled Pork three times now and the recipe is a solid keeper. The whole family loves it and it’s become a staple for us.

What I’m READING: Anne of Ingleside by L.M. Montgomery (link HERE) This book jumps forward several years from where we left baby Jem in the House of Dream and introduces us to Walter, the twins Nan and Di, Shirley, and then the littlest one Rilla. I remember that this book wasn’t one of my favorites in the series years ago, but now it makes me smile as it introduces all of the characters you grow to love in the next books.

Side note: Rainbow Valley and Rilla of Ingleside were my favorite books when I was a teen and I’m looking forward to reading them next!

The Kindle version of THE ENTIRE SERIES is still only $.49 (less than one dollar!) on Amazon. I am loving hearing from those of you who have snagged this version of this series and are now reading it again. It’s pure joy, my friends. Pure joy.

“If we had no winter, the spring would not be so pleasant: if we did not sometimes taste of adversity, prosperity would not be so welcome.” – Anne Bradstreet

Wishing you a beautiful week full of little things that make you smile!
