After several years of ordering the Fuji Apple Chicken Salad at Paradise Bakery every single chance I was given; I decided to make my own version.
Over the past month, I have made several different apple vinaigrettes and this one was my favorite. The dressing is sweet and a little bit tart. It is just thick enough to coat the salad and provide extra flavor in every bite.

This dressing sounds fantastic and would go on so many varieties of salads. Great for summertime Mary! Glad you perfected it. It's always so nice to replicate a dish you love at home. And usually, it's even better than the original.

This is excellent. I add a Fuji apple, shallot, a dash of lemon juice and fiddle with the oil and liquids to keep it from being too thick with the apple added. It is as close to Panera’s Fuji Apple salad dressing as I could make. The concentrated apple juice and honey seem to be the key.
