Homemade Popcorn ~ Savory or Sweet recipe by Barefeet In The Kitchen

Popcorn has been one of my favorite snacks as long as I can remember. A microwave (purchased primarily for popcorn) might have been my first big expense after I moved into my first apartment. Even before I started popping corn without the microwave, I loved topping that popcorn with everything from spices to cheese or most frequently chocolate.

When we stopped purchasing microwave popcorn a few years ago, I started making popcorn on the stove-top. After a year or so of making popcorn that way, we decided the inexpensive investment in a popcorn machine was well worth it. We’ve been using this machine* for several years now and we still use it on a regular basis.

Both of these recipes are for a full batch of popcorn as made in my air-popper. If you lack an air-popper, be sure to check out the stove-top method. My kids are so accustomed to air-popped corn now; they eat it plain 95% of the time. The recipes below are special treats that we look forward to for our movie nights.

Salted Caramel Popcorn is insanely, absurdly, ridiculously addictive! I couldn’t stay out of it. My family devoured half a batch the first night I made it and I can guarantee that I ate far more than my share.

I'm a popcorn fanatic… and a bit of a popcorn snob too. I bought a stovetop popper that has a twirling paddle and I totally LOVE it. You get the delicious flavor of stove popped popcorn without the hassle. Part of the trick is to use an oil with a high smoke point. I use grape seed oil for savory and coconut for sweet.

One of my favorite ingredients for savory popcorn is nutritional yeast. Sounds crazy, I know, but it's totally delicious. Another favorite is soy sauce.

I've been experimenting with kettle corn lately. I love the combination of the salty and sweet flavors. Some recipes say to add the sugar to the popper the same time you add the popcorn so it makes a nice caramelized coating, but I haven't been brave enough to try it.

I'll have to give your recipes a try next time I get a chance. I fear most of the time it's butter and salt around here because CatMan is a strict traditionalist where popcorn is concerned. Sigh.

LOVE air-popped popcorn. Tell me about your machine – how it it with unpopped kernels? Our current machine is terrible and leaves so many unpopped or half-popped that we have to be really concerned about what we're biting into. This is the second one in a row that's done this. Would love to find one we know will pop more kernels and pop more fully.

Hi, I realise you posted this about two years ago but in case you still haven't found a good popcorn maker I can recommend the "Thinkgizmos" hot air popcorn maker, we've had it for almost two years now and it pops a lot more of the kernels than our previous model and also doesn't fling it all over the kitchen. We love it. HTH. Paula
