Breakfast Nachos recipe by Barefeet In The Kitchen

Hot pinto beans, green chile sauce, warm scrambled eggs, jalapenos and melted cheese are piled on top of a layer of crisp tortilla chips. While the combination might sound bizarre initially, it was an excellent way to satisfy our craving for a spicy hot breakfast.

The nachos were an enormous hit with my whole family. My favorite part? The whole meal came together in less than 20 minutes. 

Inspired by a craving for huevos rancheros on a morning when I had little time to cook, this was a very fast alternative that came together in the time it took to scramble the eggs.

I’m already thinking about a whole bunch of different flavor combinations for future breakfast nachos.

Breakfast Nachos

Ingredients 

  • 12 ounces tortilla chips * see note regarding recommended brands
  • 1 pound breakfast sausage
  • 8 large eggs
  • 2 tablespoons water
  • ¾ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon granulated garlic or garlic powder
  • cups pinto beans or black beans drained and rinsed
  • 16 ounces freshly shredded pepper jack or Monterey jack cheese
  • ¼ cup fresh cilantro finely chopped
  • 4 green onions sliced thin

Optional Toppings

  • salsa or pico de gallo
  • sliced jalapeños
  • avocado sliced thin
  • sour cream

Instructions 

  • Preheat to BROIL and arrange an oven rack in the lower section of the oven. Line a baking sheet a aluminum foil and spread the tortilla chips across it. Set aside.
  • Warm a large skillet over medium-high heat and add the sausage. Cook and crumble it as it browns. Transfer the sausage to a plate and drain all but about a tablespoon of grease from the skillet.
  • While the sausage is cooking, combine the eggs, water, salt, pepper, and garlic in a small bowl and whisk to combine. Set aside. When the sausage finishes cooking, melt a tablespoon a butter in the empty skillet with the remaining tablespoon of grease. Pour the eggs into the warm skillet and cook over medium-low heat, gently scrambling them as the cook.
  • Let them cook without messing with them too much. When the eggs are barely solid, remove from the heat. You want to avoid overcooking them, because they will finish cooking in the oven and you don't want them to overcook.
  • Start assembling the nachos by sprinkling about a third of the cheese over the tortilla chips. Evenly distribute the sausage and eggs over the chips. Top with the beans. Sprinkle generously with the remaining cheese.
  • Place in the oven and broil for 3-5 minutes, just until the cheese melts. Don't walk away! Serve the nachos hot with the toppings of your choice.

Notes

* Mission, Kirkland, and Santitas brands will work nicely for these nachos. The sturdier chips hold up well with all of these toppings.

    I love mexican egg dishes in the AM. What a great way to get some early protein with the beans and eggs. Would be a good breakfast after a morning workout. Sounds good to me!

    What would be the best way to make this for a crowd? Instead of individual plates, put the nachos in a casserole dish?

      Hi, Amy. I typically make nachos in a sheet pan for a crowd, then divide onto plates. Enjoy!
