Did you know that you can eat the green leafy carrot tops? I’m not sure I’d want to dive right in and take a bite of a carrot top, but in a smoothie? Yes, please! I’ve been loving all the carrots in our CSA Boxes.
I simply toss the tops in a freezer bag and then include them in future smoothies. Plenty of fruit in a smoothie can hide plenty of greens.
My boys were thrilled to be my taste testers for this smoothie. I made the smoothie extra thick, because they wanted a smoothie they could eat with a spoon. Blend completely and then adjust the thickness with extra juice or water if you prefer a thinner smoothie.
Blueberry Carrot Top Smoothie
Ingredients
- 1/2 cup orange juice plus water or more juice if needed
- Green leafy tops from about ½ lb of carrots see pic above - approx one full handful
- 2 small bananas
- 1 1/2 cups blueberries
- optional: 1 tablespoon chia seeds
Instructions
- Layer the orange juice, carrot tops and bananas into the blender. Puree until completely smooth. Add the blueberries and blend again until smooth. Add chia seeds if desired and pulse to combine. Enjoy!
