Brown Sugar Blueberry Banana Crockpot Oatmeal recipe by Barefeet In The Kitchen

Warm blueberries and banana slices, soft oats and almonds, along with just a bit of brown sugar makes for an excellent and easy breakfast. Once a week, the kids and I run out to pick up our milk first thing in the morning.

Slow cooked oatmeals are the perfect breakfast for those days. I can stir it all together and turn on the crockpot while we are getting ready to leave the house. When we return, the house smells fabulous and the oatmeal is waiting for us.

Brown Sugar Blueberry Banana Crockpot Oatmeal

Servings: 4 -5 servings

Ingredients 

  • 2 cups rolled oats
  • 2 large bananas sliced
  • 1/2 cup frozen blueberries fresh berries would be even better
  • 1/3 cup sliced almonds
  • 1/4 cup brown sugar
  • 1/2 teaspoon kosher salt
  • 4 cups of milk

Instructions

  • Place all of the ingredients into the crockpot.  Stir to combine and cover with the lid. Cook on high for 1 ½ hours. Stirring occasionally, or not at all. Serve when everything is warm and softened to your liking.The longer this cooks, the thicker it will become. I like it best when the oats are softened, but still separate and not a cooked oatmeal texture. Enjoy!
  • * I use a small 2 quart crockpot for this meal, but a larger one will work fine. Simply watch your cooking times and adjust as necessary.

    I eat oatmeal for breakfast pretty much every morning, and I've found there's not much that beats bananas, blueberries and almonds as toppers 🙂 Love your presentation and that white bowl is gorgeous…

    I LOVE this recipe. I actually cook it on the stove, i'm going to try it in the crock pot soon though. This recipe actually gets me excited to eat oats. I didn't have blueberries this time so I used blackberries- just as good. I think the salt makes all the difference, and I love that the oats are the perfect consistency – almost like granola instead of mush (which is what happens when you cook it in the microwave.) YUM. Thanks for sharing!
