1cupjasmine rice
¾cuppineapple juice
1cupwater
½cupfrozen pineapple tidbitsif using canned tidbits, reduce the above water by ¼ cup
½teaspoonkosher salt
4green onionsvery thinly sliced, about ¼ cup
2tablespoonschopped fresh cilantroadjust to taste OPTIONAL
2tablespoonsfresh lime juiceadjust to taste OPTIONAL
Instructions
Combine the rice, juice, water, and salt in a large saucepan or skillet with a lid. Cover and bring to a boil. Stir and then reduce to a low simmer and cover with lid.
Simmer for 16-18 minutes, until the rice is tender. Stir to fluff the rice and add the pineapple, onions, cilantro, and lime. Stir to combine.
