Baked Oatmeal
  • 3 cups oatmeal
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup raisins
  • 1/3 cup melted butter or oil
  • 3 eggs
  • 1 1/2 cups milk
  1. Combine all ingredients and pour into a greased 8x8 pan. Cook at 350 for 35 minutes. Serve warm.
  2. Side note: The uncooked pan of oatmeal can be stored in the refrigerator overnight. When I wake up, I turn on the oven and bake it while I am getting ready. Yes, I even put it in the oven before it is preheated, just add about ten extra minutes. I love the simplicity of this breakfast!
  3. FREEZER MEAL: Cool completely and then portion into individual servings. Store in airtight freezer bags or small containers. Reheat in the microwave with about a tablespoon of water.
