What is a Tomato Pie?

This is a savory pie that managed to make every single person in my house smile and caused my youngest to dramatically roll his eyes back in his head as he declared it the most amazing tomatoes ever and then ask for a second slice of the pie.

My sweet friend and blog reader Henny has been emailing me in reply to my newsletters for a few years now, since before we moved to Ohio. She’s given me great dog-mom advice over the years and passed along some recipes too.

Classic Tomato Pie

The Southern Tomato Pie recipe is one of hers and it is absolutely a keeper. I have to admit that when I first heard “Tomato Pie” I wasn’t entirely sure what to expect.

I’ve had a tomato tart and tomato focaccia in the past that were both absolutely delicious, but this tomato pie? It’s a whole new world of tomato awesomeness and I’m so very excited to share Henny’s Tomato Pie with you today.

If you’ve been blessed with an abundance of summer tomatoes, put this recipe at the top of your list. Along with the BLT Salad that I shared earlier this week, we’ve been in tomato heaven lately.

With plenty of sweet fresh tomatoes, cheese, mayo (trust me, please, it just plain works here), fresh basil, green onions, and black pepper, this is a savory summer pie like nothing else I’ve tasted.

This pie rated two thumbs up all the way around the kitchen table. Serve this for a light meal with a salad or add some grilled chicken thighs if you want to bump up the heartiness.

Tomato Pie Ingredients

  • pie crust – homemade or store-bought
  • summer tomatoes
  • kosher salt
  • fresh basil
  • fresh green onions
  • mozzarella cheese
  • extra-sharp cheddar cheese
  • mayonnaise
  • freshly ground black pepper

Southern Tomato Pie Recipe

  1. Preheat oven to 375°F. Place the pie crust in a deep pie plate and prick with a fork. (This allows steam to escape and prevents the crust from puffing up as it bakes.)
  2. Pre-bake the crust for about 10 minutes, until it is very lightly browned. Allow the crust to cool completely before filling.
  3. While the crust is cooling, slice tomatoes and sprinkle with a tiny bit of salt. Lay them on paper towels and blot once with additional paper towels before layering in the cooled pie shell.
  4. Alternate layers of tomatoes with a sprinkling of green onions and basil. (You’ll get 2-3 layers depending on how thick you’ve sliced the tomatoes.) Stir together the mayonnaise and cheeses. Add plenty of black pepper.
  5. Top the pie with the cheese mixture. Place the pie in the 375°F oven and after it is in the oven, reduce the temperature to 350°F. Bake for 30 minutes until the cheese has melted and begins to brown. If the crust starts to get too dark, use a pie crust cover or wrap the edge of the pan in foil.
  6. Remove from the oven and cool at least 20 minutes before slicing. For clean slices, allow the pie to cool to room temperature.

Ingredients 

  • 1 pie crust homemade or store-bought
  • 4-6 summer tomatoes, depending on size
  • ½ – 1 teaspoon kosher salt
  • 8 fresh basil leaves, rolled and sliced thin
  • ½ cup fresh green onions, sliced thin
  • 8 ounces mozzarella pearls, drained OR 1 cup of shredded mozzarella
  • 4 ounces extra-sharp cheddar cheese, grated OR gruyere or fontina cheese
  • 1 cup mayonnaise
  • 1 teaspoon freshly ground black pepper
