Welcome to the weekend, my friends! It’s fake spring over here with chilly weather and bright green lawns. The daffodils are everywhere and I’m so happy each time I see them. We haven’t seen the sun much this week, but real spring weather is right around the corner and I can hardly wait.

ON THE BLOG this week: Crispy roasted potatoes, topped with melting cheese and plenty of crisp bacon are a great side dish (or main dish!) for any meal. These really are the best ever Cheesy Potatoes! I’ve served them with eggs for breakfast and as a side dish with dinner. However you serve these potatoes, there is never a bite leftover.

Chewy coconut filling layered onto a buttery shortbread crust to make these Coconut Chews; this recipe is so simple to make I have been making it since I was a child. This is my grandma’s recipe and if you are a coconut lover, these can not be beat.

What I’m CRAVING: This Luscious Lemon Mousse Cake looks like a true labor of love, but what an amazing cake! I’m going to be dreaming about this incredible dessert for days.

My FAVORITE THINGS this week are these dice trays. If your family plays a lot of games or dice games specifically, these are FANTASTIC. We like to play a few games where everyone rolls at once and the noise can be intense. 

With these trays, the sounds are muted, not silenced – feel free to tell me when you find those magical trays – but the dice sounds are muted a good bit. They get bonus points as well because the dice are also far less likely to fly off the table when someone gets excited. Yes, we’re that game-playing family sometimes.

What I’m WATCHING: I’m on season 3 of Psych and liking it more with each episode. The character development is terrific and the show never fails to make me laugh.

What I’m READING: I’m re-reading China Rich Girlfriend by Kevin Kwan. After watching Crazy Rich Asians a couple of weeks ago, I could resist reading the series again. These books are so much fun. They’re light reads that are so much better than I expected them to be.
