Welcome to the weekend, my friends! It’s kind of hard to believe that tomorrow is the last day of January. How’s your year starting? Ours feels like it is flying by, but in a great way. We’re making plans for summer and looking forward to finally doing some more camping!

ON THE BLOG this week: Mildly spicy angel hair pasta tossed with vegetables in a very light cream sauce creates this Creamy Chipotle Pasta. This recipe makes my tastebuds so very happy.

Spicy red chile sauce meets up with creamy refried beans and plenty of cheese to make these Chicken Burritos. One bite was all it took and we were hooked.

Garlic powder, onion powder, smoked paprika, kosher salt, and freshly ground pepper make up the All-Purpose Seasoning that I reach for the most often. Loaded with my most frequently used spices, this seasoning blend is always worthy of space in my spice cabinet – although, if I’m honest, it’s on the counter more often than in the cabinet most days. Do you have a fave spice blend?

What I’m CRAVING: This Crab Rangoon Dip from Bellyfull sounds amazing. Wouldn’t it be great for game day snacking?

My FAVORITE THINGS this week are these fleece-lined knit mittens. I was today years old when I learned that MITTENS are infinitely warmer than gloves. These babies are awesome for a walk in the cold and easy enough to pop off if I want to take a photo. They get a few bonus points for being cute (and cheap!) too.

What I’m READING: Anne of Windy Poplars by L.M. Montgomery. All is right in the world again, as Anne has finally come to realize what we all knew for years. She and Gilbert were meant to be. 

Reading the letters she wrote to him from Windy Poplars, through her years of teaching while he’s away at medical school, oh it makes me so happy. I can hardly wait for them to be married and move into their house of dreams!
