Welcome to the weekend, my friends! Have you been watching our chickens? They’ve grown so fast, I’ve been a wee bit obsessed lately. Now that their coop and run have been completed, I’m getting very excited for the first eggs! (They should start laying in the next 2-3 weeks.)

One lucky winner will be able to choose whichever color and size that they like best. My favorite thing to make in my dutch oven is Pork Carnitas, but it also makes terrific soups, stews, chilis, and roasts.

ON THE BLOG this week: Creamy Chicken Enchilada Soup is a hearty soup filled with chunks of tender chicken, black beans, corn, peppers, and tomatoes. Everything comes together in a creamy rich soup base that tastes like the red chile enchiladas at your favorite Mexican restaurant.

Homemade Green Bean Casserole is about to change your holiday side dish game. I’m a great big fan of any dish that can be prepared ahead of time for holiday meals and this recipe delivers awesome results when prepped in advance. (Take a pass on those cans of soup, you won’t be needing them this year.)

Salted Caramel Sauce has earned a special spot in the refrigerator. This sweet sauce makes a terrific addition to countless desserts. I made this for a special dessert and loved it so much, we just kept making it.

What I’m CRAVING: These pretty little Beef Pot Pies over at A Family Feast look fantastic. When the weather cools off is there a better comfort food than flaky pastry filled with meat and vegetables in a creamy sauce? 

My FAVORITE THINGS this week are these ornaments I ordered for the family this year. (link HERE) I’m laughing all over again looking at them now. We open new ornaments during advent each year and these will definitely memorialize 2020.

What I’m READING: The World According To Fannie Davis by Bridgett M. Davis (link HERE) Part bookie, part banker, mother, wife, and granddaughter of slaves, the author’s mother, Fannie, ran a numbers business in Detroit for thirty-four years.

This was pre-Lottery days and Fannie competed with actual mobsters and in the numbers business. And in doing that, she provided a home where Bridgett grew up with her needs and wants always met abundantly. This was a tough read because of the tragedies involved, but it was also an insightful one.

    I’ve been craving a pot roast for months, and now that the weather is changing, and I can finally cook with friends, a pot roast, with home made bread, sounds wonderful!

    I love tortilla soup and all things Mexican. I would definitely make your creamy enchilada soup😋but then try so many of the delicious recipes that I have collecting from your posts. Winter can be dreary and long but cooking always makes the day brighter and the house cozier. Thank you for sharing all your wonderful recipes.

    I have been wanting a cast-iron lodge Dutch oven for a long time. There’s so many things I would make in it. I must say your chicken Enchilada soup sounds scrumptious. If I were to win it would seem fitting that would be the soup recipe to start off. Next would be a bread recipe that I’ve seen that would be made in a Dutch oven. The two together would be perfect. Beyond that I’ve always enjoyed your site.

    The first thing I would cook in my Dutch oven would be chili and a big skillet of cornbread cooked in my cast iron skillet to go with it. It’s that time of the year.

    I would love to try your recipe for pork carnitas! Getting colder out and near time to make Chili! A new Dutch oven would certainly help.

    I would do a Julia Child favorite and do Beef Bourguignon. Love my Lodge pans, they belonged to my mother in law. Still working great.

    This would be for my husband to use! He makes the greatest chicken noodle soup, complete with big egg noodles and spinach. It’s a must when our great-grandson comes over. Brenton is five and thinks papa’s soup is amazing.

    No doubt about it, the first thing I would make in the Lodge Dutch oven, should I win, would be Guinness Beef Stew. My husband and I were so fortunate to travel to Dublin Ireland as part of a work trip, and we took a tour of the Guinness Factory. After that fascinating tour, we were served a wonderful meal that included Guinness beef stew, and it was awesome. Cast iron is the perfect vessel to cook that stew – Here’s hoping that I am chosen to be the lucky recipient! Thank you Mary, for the opportunity to enter the drawing!

    I would love to make my grandmother’s homemade beet soup. I have a whole bunch of her recipes to try out. I have always wanted one but have not been able to do so with my husbands medical bills. Thanks for such a great giveaway.

    I’d for sure make beef stew, like really really thick beef stew. It’s getting chilly in the northeast and warm stew makes my day!
