Welcome to the weekend, my friends! We’ve only been back in school for a week and you can bet that I’m already looking forward to the three day weekend. We’re having some friends over and planning to make the most of the awesome weather. Here’s hoping for low humidity and continued cool temperatures.

ON THE BLOG this week: Creamy Avocado Sauce seasoned lightly with salt, pepper, and lime is one of the simplest recipes I’ve made this year and yet, it stands out as truly amazing. Take my word on this recipe, and buy a couple of avocados as soon as possible.

Warm slices of baked apples covered with cinnamon brown sugar streusel topping are all that’s required to make this Old Fashioned Apple Crisp. Topped with some Homemade Ice Cream this is a dream of a dessert.

Light and slightly tangy Creamy Pasta Salad, with just enough creamy dressing to coat the noodles and vegetables, this is one heck of an awesome cold pasta salad. Perfect on its own for a light meal or as a side dish for all the summer potlucks and barbecues.

What I’m CRAVING: All the watermelon – so much watermelon. We’ve been buying a watermelon at least once, if not twice a week lately and I’m eating it basically all day long. I’m going to be so sad when the season ends!

My friend Sandy’s Watermelon Salsa caught my eye this week and I’m thinking I need to try it.

My FAVORITE THINGS this week are these Blink Tears eye drops. I’ve been using them as needed for several years now. The doctor recommended them after I had Lasik and they are still the best eye drops I’ve ever used.

What I’m READING: How an Economy Grows and Why It Crashes by Peter D. Schiff. This book is an excellent overview of monetary systems and how the economy both grows and crashes. It’s written at a 5th-grade level so that everyone can understand it. The book is written in story form with loads of funny illustrations. My boys and I both found it interesting.
