Star Crunch Ice Cream
Star Crunch Ice Cream is creamy caramel flavored ice cream with bits of crushed star crunch cookies in each bite.
Servings: 8 servings (about 1.5 quarts)
Ingredients
- 1½ cups heavy cream
- 1½ cup whole milk
- ⅔ cup dark brown sugar
- ½ teaspoon kosher salt
- 2 teaspoons vanilla extract
- 6 Star Crunch Cookies chopped very small, about 1½ cups worth
Instructions
- Combine the cream, milk, brown sugar, salt, vanilla bean paste, and vanilla extract in a mixing bowl. Whisk to combine.
- Process according to your machine’s instructions. When the mixture is almost done churning, add the chopped cookies. Finish churning and serve immediately for soft-serve ice cream or transfer to a freezer-safe storage container and freeze until ready to serve.
Notes
If you don't happen to have dark brown sugar on hand, you can add 1 teaspoon of molasses to the mixture to create the same richer flavor.
