Place the Gorgonzola in a small bowl and smash it with a fork. Add the rest of the ingredients and stir to combine. Transfer to an airtight container and chill until ready to serve. This will keep well in the refrigerator for at least a week. Enjoy!
This is a thick dressing that will also work well as a dip. If you prefer a thinner, more pourable, dressing, stir in a splash more milk or buttermilk to thin it.
