Roasted Fingerling Potatoes with Chipotle Garlic Sauce

2lbsfingerling potatoes, washed and patted dry
Dipping Sauce Ingredients
2chipotle peppers in adobo sauce, finely mincedI used mine straight from the freezer
2garlic cloves, mincedminced
1teaspoonwhite wine vinegarI used the garlic infused vinegar from our preserved garlic
Preheat the oven to 400 degrees. Place the potatoes on a large baking sheet and prick holes in each one with a fork. Drizzle them with oil and then use your hands to coat them thoroughly. Sprinkle the potatoes with salt.
Roast the potatoes until they are fork tender, about 25 minutes. While the potatoes are cooking, whisk together the sauce. Transfer to an airtight container and chill until ready to serve. Enjoy!
