Frito pie casserole is the large scale, crowd-friendly version of walking tacos; seasoned taco meat with beans topped with melted cheese and crunchy corn chips. If you want to make it a meal in one, top as you would a taco with lettuce, tomatoes, peppers, onions, and cilantro!
In a large skillet over medium-high heat, cook and crumble the ground beef. Sprinkle with taco seasoning as it cooks. When the meat has been browned, add the beans and stir to combine.
Preheat the oven to 350°F. Pour half the Fritos into an 8-inch baking dish. Sprinkle with about 2 cups of cheese and top with the beef and bean mixture. Top with the remaining cheese. Bake for 15-18 minutes, until the cheese has melted.
Remove from the oven and serve, topped with the remaining Fritos, and whichever other toppings you like best.
