Creamy caesar dressing is a salad classic for a reason; flavorful and full of umami, it makes every salad special. It also makes a fantastic dip for raw vegetables!
In a small bowl, combine the mayonnaise, lemon juice, mustard, and Worcestershire. Whisk to combine.
Add the anchovy paste, garlic, Parmesan, salt, and pepper. Stir or whisk again to combine. Taste the dressing and adjust seasonings as desired. Transfer to an airtight container and refrigerate until ready to use.
Notes
I like to use a microplane to grate the cheese, as the fine shred distributes nicely into the dressing.If you can't find anchovy paste, you can simply substitute 3 or 4 anchovy filets from a can and mash them thoroughly with a fork before combining them with the remaining ingredients.This dressing will keep nicely in the refrigerator for up to a week.
