White Bean and Cheese Dip
  • 1 1/2 cups of cooked white beans great northern or cannelini
  • Olive oil
  • 1 large clove minced garlic
  • Salt and pepper to taste
  • 1/3 cup Monterrey Jack cheese
  1. Saute garlic in olive oil. Add beans and mash to desired consistency. Salt and pepper generously. Add more or less olive oil depending on thickness you desire. Reduce heat to low and sprinkle with shredded cheese. Stir into beans and cover with lid to melt. Serve warm with tortilla chips, crackers or raw veggies. Enjoy!
