Broiled tilapia with a lemon garlic marinade is quite frankly the easiest and some of the best fish I have ever made.

1teaspoonkosher salt
¼teaspoonpepper

Instructions
Place the tilapia in a ziploc bag or airtight container. Add the lemon juice, oil, garlic, salt, pepper, and oregano. Turn the fish a few times to coat all of the pieces. Close tightly and place in the refrigerator for 1 hour.
When ready to cook the fish, turn the oven on to broil (high setting, if you have that option) and place the fish on a foil lined baking sheet.
Broil for 3-7 minutes* depending on the size and thickness of your fish.
Notes
* Depending on the size of the filets, 1 pound of tilapia may be as few as 2-3 pieces or as many as 8. Adjust the cooking time accordingly! 5-6 ounce filets will require 5-7 minutes under the broiler. 1-2 ounce filets will be done in about 3 minutes. Don't walk away while they are in the oven.Tilapia is finished cooking when it flakes apart with a fork and is opaque or white all the way through. Remember that it will keep cooking once you remove it from the oven, so be sure to remove it a minute or two early.
