Ingredients
1small head of broccoli, about 2 cups broccoli floretsstem sliced thin and included if desired
½lbasparagustrimmed and cut into 2" pieces
1teaspoonolive oil
1tablespoonbutter
kosher saltto taste
freshly ground black pepperto taste
2tablespoonsparmesanfinely grated
Instructions
In a large skillet over medium-high heat, warm the oil. Add the vegetables and toss to coat. Season with salt and pepper to taste. Add 1 tablespoon of water to the skillet and cover with a lid for 2-3 minutes to partially steam the vegetables.
Uncover and continue cooking, tossing constantly, for about 4-6 more minutes. You want the vegetables to turn bright green and stay fairly crisp while barely softening from the heat.
Add the butter to the bottom of the skillet and toss quickly to coat the pieces. Remove from the heat and sprinkle with Parmesan before serving. Enjoy!
