Welcome to the weekend, my friends! I’ve been in Phoenix this week, catching up with friends and family, visiting my cousin’s church, and soaking in as much of the spectacular weather as possible.

As much as I adore Ohio, (and don’t miss living in the Valley of the Sun), it sure is fun to visit when not in the middle of melting summer temperatures.

ON THE BLOGS this week: Fluffy eggs, savory ham, and bright peppers are topped with plenty of cheese in this Crescent Roll Breakfast Casserole with a wonderful flaky crust.

So. Much. Fun. There are a whole lot of adjectives I could use to describe my introduction to a Louisiana Crawfish Boil, but WOW sums it up nicely. I’ve laid out all the steps so you can set up and cook a Louisiana seafood boil with shrimp or crawfish. It turns out that doing a Louisiana-style seafood boil on the stove is much simpler than you might think!

Ground beef and potato casserole is a hearty, comfort-food dish that combines ground beef, sliced potatoes, and a rich, creamy sauce. Baked together under a layer of cheesy goodness, this Ground Beef Potato Casserole is a dinner the whole family enjoys.

With only a handful of ingredients, these Glazed Sweet Potatoes form an amazing caramelized brown sugar crust on top as they roast and broil in the oven. When I tell you these potatoes are AMAZING, trust me, they truly are.

Tender, sweet pearl onions in a luscious cream sauce make up the Creamed Pearl Onions which are a classic side dish.

Peanut Butter Oatmeal Balls pack a punch of rich peanut butter with the earthy taste of oats and that hint of sweetness we all crave.

Thick, chewy, fudgy brownies with generous chocolate icing are enticing enough to have me eating these Lunch Lady Brownies for dinner.

Crunchy, chewy Oreo pieces and chunks of decadent brownie mingle together in every scoop of this Oreo Brownie Ice Cream.

What I’m CRAVING: My friend Lynne’s cheesy chicken enchiladas! You already know that we’re an enchilada-loving family, and her enchiladas need to happen again soon. 

My FAVORITE THING this week is my YETI cup. I use it for literally everything. I even bring it along when I travel. It’s my cup for piping hot coffee and tea, and also my cup for ice-cold water throughout the day. 

Side note – the new MagSlider lids are the best invention ever. They are super easy to use and they pop apart easily for cleaning too.

What I’m LISTENING to: Peace Like A River: The Hymns Project by Chris Rice. This has been a favorite album for me for many years now. Classic hymns tend to be my favorite way to start each day. I don’t think there is anything better than this daily reminder that it is truly well with my soul.
