Welcome to the weekend, my friends! Can you believe it’s already September? The leaves on a few of our trees are already turning yellow and starting to fall. I’m so very excited about the cooler weather that’s on its way and can hardly wait to break out my jeans and sweaters once again.
ON THE BLOG this week: This BLT Salad is fully loaded with crunchy romaine lettuce, sweet tomatoes and fresh corn, salty bacon, rich and creamy avocado slices, chunks of cheddar cheese, crunchy croutons, and the perfect ranch dressing. Even non-salad lovers are sure to enjoy the BLT Salad.
Sweet summer tomatoes are layered with basil, green onions, and plenty of cheese inside a pastry crust to create this irresistible summer favorite, the Southern Tomato Pie. This is a savory pie that managed to make every single person in my house smile and caused my youngest to dramatically roll his eyes back in his head as he declared it “the most amazing tomatoes ever.” (Thanks again for the recipe, Henny!)
What I’m CRAVING: Jessica never fails to make my mouth water with her recipes and this Burst Summer Tomato and Burrata Pasta looks and sounds absolutely incredible!
My FAVORITE THING this week is this pen that writes in the dark. I’m certain that some of you may laugh at this one, but when I get a random recipe idea or remember something for my to-do list as I’m falling asleep, I want to write it down. BUT I don’t want to turn on a light and I don’t keep my phone (with my notes app on it) in my bedroom at night.
So, this pen is awesome. I keep it with a small notepad on my nightstand. I’ve only had it for a few days, but I’m loving it. It’s great to be able to scribble something down in the dark. That said, it’s not my beloved Jetstream pen quality, but it gets the job done when I need to write in the dark.
(I warned you, it’s a nerdy laughable thing this week, but I felt like a genius when I had the idea for the pen and then actually found it online.)
What I’m WATCHING: Terminator 2. We picked up the collection of Terminator movies this summer and I’m having fun watching through them with my older kids. This one has been my favorite for a long time, but I’ve only seen the later ones a time or two. We’ll see if my opinion changes after watching the rest of them in series.
