3cupschopped cooked chicken
2ears of cornkernels removed
1tablespoonred or green onionfinely chopped or sliced
1tablespooncotija cheesecrumbled or sliced thin

½-1tablespoonCholula hot sauceadjust to taste
1tablespoonsfresh lime juiceabout 1 medium lime
¼-½teaspoonkosher saltadjust to taste
¼teaspoonfreshly ground black pepperadjust to taste
⅙teaspoonground red chili powder
Combine the chicken, corn, onion, cotija, and cilantro in a large mixing bowl. Stir together the mayonnaise, hot sauce, lime juice, sugar, salt, pepper, and chili powder. Pour over the chicken mixture and stir to coat.
