Dressing Ingredients
2tablespoonslight flavored olive oil
2tablespoonslime juiceabout 1 lime's worth
2teaspoonshoney
1teaspoonwhite vinegar
¼teaspoonchile powder
⅛teaspoonfine grain sea salt
Salad Ingredients
6cupslettuce of your choicechopped or torn into bite-size pieces
2mangoessliced thin
¼red onionsliced as thinly as possible
Instructions
In a small jar or bowl, combine the olive oil, lime juice, honey, vinegar, chile powder, and salt. Whisk or shake to combine.
Prepare the lettuce, mangoes, and onion and combine in a large bowl. Immediately before serving, drizzle with about 1/2 of the dressing and toss gently.
Taste and adjust dressing accordingly. Enjoy!
Notes
You can use whichever lettuce you like best for this salad. I like it best with a blend of red and green leaf lettuces and some spring mix as well.
