3cupscooked great northern beans or2 14 ounce cans
1 14ouncecan diced tomatoes
1cuproasted and chopped green chilefresh, frozen, or canned is fine
2cupschicken broth or1 14 ounce can
1/4 - 1/2teaspooncayenne pepper
3cupschopped chickencut bite size
Optional: lime wedges for servinggrated cheese for topping
Combine the beans, tomatoes, chile, chicken both, cumin, salt, and pepper in a large pot. Stir and bring to a boil before reducing to simmer for five minutes. Add the cooked chicken, stir and simmer a minute longer. Remove from the heat when the chicken is warm. Scoop into bowls and squeeze lime around the top just before serving, if desired. Enjoy!
