Ingredients
1½cupsheavy cream
1½cupswhole milk
¾cupsugar
⅛teaspoonkosher salt
1teaspoonvanilla extract
½teaspoonpeppermint extract
6dropsgreen food coloring OPTIONAL
For the Chocolate Chips
½cupsemi-sweet chocolate chips
1tablespooncoconut oil
Instructions
Combine the cream, milk, sugar, salt, vanilla extract, peppermint extract, and green food coloring (if desired) in a large bowl. Whisk to combine. Pour the mixture into the ice cream maker and churn according to the manufacturer's instructions.
Chocolate Chip Instructions
While the ice cream is churning, combine the chocolate chips and coconut oil in a small glass bowl. Microwave for 1 minute. Remove from the microwave and stir until smooth. If needed, heat for an additional 20-30 seconds. Stir until smooth. Let cool a bit at room temperature while the ice cream finishes churning.
When the ice cream finishes churning, transfer about a quarter of the ice cream to an airtight container and drizzle the chocolate in thin lines over the ice cream. Scoop another portion of the ice cream into the container and repeat the chocolate drizzle for each layer of ice cream. Freeze until firm and ready to serve.
