Ingredients
¼cupfresh mint leavesplus more for garnish
¼cupfresh or frozen blueberries
½cupfresh lime juiceabout 5 limes worth
2-4tablespoonssimple syrupadd more to taste as desired
⅓cupwhite or light rumadd more to taste as desired
3cupsicedivided

Instructions
Combine the mint, blueberries, and lime juice in a small pitcher or mason jar. Use a muddler to crush the mint and berries in the lime juice.
Add the simple syrup and rum. Add 1 cup of ice and stir well or shake to mix and chill. Then, fill individual glasses halfway with ice and divide the mojito mixture between them..
Top each glass with club soda and garnish with mint and blueberries, if desired.
Notes
Note: To make simple syrup, combine ½ cup water and ½ cup white sugar in a jar and shake until the sugar is dissolved. It should only take a couple minutes.The syrup will keep in the refrigerator for several weeks. The syrup will be much thinner than traditional simple syrup and will mix smoothly into the drinks.If you aren't a fan of the crushed mint leaves and berries in your drink, I recommend pouring the drinks through a small strainer into each glass.
