Ingredients
2flour tortillas
1teaspoonbutter
⅔cupshredded mozzarella cheesedivided
2tablespoonspizza sauce
6 slicespepperonisliced in half
2fresh basil leavessliced thin OPTIONAL
Instructions
Preheat a large non-stick skillet to medium-high heat. Lightly butter one side of two tortillas with about ½ a teaspoon of butter and place one butter side down in the hot pan.
Top with ⅓ cup of cheese, 2 tablespoons of pizza sauce, pepperoni, and basil. Top with the remaining cheese and cover with the second tortilla, butter side up.
Let the quesadilla cook for 2-3 minutes. When the cheese has begun to melt and the bottom tortilla is browning slightly, carefully flip the quesadilla over. Continue to cook until all the cheese is melted and the tortilla is crisp around the edges.
Using the spatula, transfer the quesadilla back to a cutting board and cut it into wedges while still hot. Serve warm.
