Monster Cookie Dough Chunks
½cupchunky peanut butter
2tablespoonsbuttersoftened
½teaspoonvanilla
1½teaspoonsmaple syrup
¼teaspoonbaking sodaoptional, but it adds a distinct "dough" flavor
⅓cup, plus 3 tablespoonslight brown sugar
½cupquick-cooking oats
½cupmini chocolate chipsdivided (set aside for ice cream)
¼cupmini m&m candies
Ice Cream Ingredients
1¾cupsheavy cream
1¼cupswhole milk
¾cupsugar
¼teaspoonskosher salt
2teaspoonsvanilla extract

Stir together the butter, peanut butter, brown sugar, baking soda, syrup, and vanilla until creamy. Add the oats and stir again. Add ¼ cup of chocolate chips and the m&m candies and stir once more.
Scoop into ½" balls (about a scant teaspoon's worth) and smooth with your hands. Refrigerate or freeze for at least 20 minutes before adding to the ice cream.
Ice Cream Instructions
Combine the cream, milk, sugar, salt, and vanilla in a bowl and whisk to combine. Pour into the ice cream maker and churn according to the manufacturer's instructions.
Transfer the finished ice cream to an airtight container and gently fold in the remaining chocolate chips and chunks of cookie dough. Place in the freezer until ready to serve.
Notes
The cookie dough bites will keep well in an airtight container in the refrigerator for a week or in the freezer for 3-4 months.
