6earscorn, kernels removed, about 4 cups
1large red or green bell pepper (or half of each), about 1 1/2 cups
1/2medium red onion, chopped very small, about 2/3 cup
1cuphalved grape tomatoes
1/4cupfresh cilantro or Italian parsley, chopped
Dressing Ingredients
1/4cupextra virgin olive oil
1/4cupfresh lime juice, about 2 large limes worth
2cloves garlic, minced
1/2teaspoonkosher salt
1/2teaspoonfreshly ground black pepper
Instructions
Combine the corn, bell pepper, onion, tomatoes, and cilantro in a mixing bowl. In a small bowl or measuring cup, combine the oil, lime juice, garlic, salt, and pepper. Whisk or stir to combine.
