3½cupsold fashioned oats
⅓cupbrown sugar
2teaspoonsbaking powder
1teaspoonkosher salt
¾teaspoonground cinnamon
½teaspoonground gingeroptional
¼cupmelted butter
3eggs
1¼cupmilk
¾cupchopped strawberriesabout ½" pieces
½cupraspberries
½cupblueberries
½cupsliced almondsoptional
Instructions
Preheat the oven to 350°F. Grease a 9x13 pan with butter. Stir together the oats, brown sugar, baking powder, salt, cinnamon, and ginger in a large mixing bowl.
Add the melted butter, eggs, and milk. Stir to coat. Gently fold in the berries and the almonds, if desired.
Pour into the prepared pan and bake for 26-30 minutes, until a knife inserted comes out clean. Let cool about 10 minutes before serving.
Notes
The brown sugar can be increased to ⅔ cup for additional sweetness. I like the recipe as it is written, as it isn't very sweet at all. If you prefer your oatmeal a bit sweeter, go ahead and double the listed amount.Honey may also be substituted for the brown sugar in this recipe.FREEZER MEAL: Let the oatmeal cool completely and then cut or scoop into portions. Store the oatmeal in airtight freezer safe bags or containers. Reheat in the microwave with a tablespoon of water.
